Homestyle Dal
Dal (lentil soup) is an inseparable part of an Indian thali. Across the nation, the recipe of dal may change as the dialects change. But every traditional thali is incomplete without a katori-full dal. For certain ethnic groups, dal paired with steamed rice and ghee is a complete meal. Ideally, it checks all the food groups- carbs, fats, and proteins.
This recipe is made using yellow split moong beans. However, you may use red lentils, green whole moong beans, pigeon beans, etc. A combination of different dals can be another option to go about this recipe.
Step 1: Boil moong beans until the bean is completely disintegrated and soupy.
Step 2: Heat oil, and sear garlic until golden brown. Then add chilies, cumin seeds, and mustard seeds.
Step 3: Add tomatoes and curry leaves
Step 4: Add turmeric powder and chili powder
Step 5: Add kokum (Optional). Can be substituted with tamarind pulp.
Step 6: Finally add boiled moong beans, add salt and jaggery (can use brown sugar instead).
