Eggs Kejriwal


On my last trip to India, I was introduced to this dish. Kejriwal being the last name of the CM of Delhi, it definitely stood out. It is as fancy as sunny side eggs on toast. Few extras that make this dish are chopped red onion, green chilies, and cilantro. And a layer of melted cheese on the toast.


The dish was invented back in the 60s by a gentleman named D.P. Kejriwal. Apparently, he liked his eggs cooked a certain way which then became the restaurant special. Many hip, trendy and modern Indian bistro-style restaurants feature this dish and its creative versions on their menu. One such version would be to add sauteed mushrooms on the toast.

I added chopped finger hot peppers, cracked black pepper, fine diced red onions, and cilantro. Easy to make. Definitely one of my breakfast/brunch favourites.

Ingredients:

2 eggs

2 slices of bread (sourdough bread is ideal, however, any loaf of bread should work as per your liking)

1/4 cup cheddar, grated

1 tbsp red onions, fine diced

1/4 fingerhot pepper, thinly sliced (can substitute with jalapenos, birds eye chili, or green chili)

1 sprig cilantro, chopped finely

Salt

Black pepper

Butter

Method:

1. Apply butter on the bread slices and toast with shredded cheddar on top, in a toaster oven.

2. In a pan, add some butter. When the butter melts, crack two eggs. Keep the heat low.

3. Add salt, black pepper, chopped onions, cilantro and hot chilies. Add more chilies if you like it spicy.

4. Cook the eggs on low heat until the egg whites are completely cooked. Carefully place one egg on a piece of toast.

5. Serve hot!
